The Pour Over Extraction Method Explained

What is the pour over extraction method, and why is it great for specialty coffee?

The pour-over method is a manual coffee brewing technique where hot water is poured over ground coffee in a filter, allowing it to slowly drip into a cup or carafe. It’s a precise, hands-on way to extract coffee with more control, highlighting the complex flavour profiles of specialty coffee.

Unlike regular coffee where a batch method is suitable for a somewhat simpler and bitter flavour profile, specialty coffee thrives under extraction methods with more precision and control allowing for the unique experience by bringing out the best of high-quality specialty coffee beans.

The pour over method is simple to execute and requires only the following items:

  • Medium/Coarse ground coffee
  • Coffee dripper
  • Paper filters
  • Cup or carafe

How It Works: Step-by-Step

  1. Grind the Coffee – Use a medium-coarse grind (similar to sea salt) for balanced extraction.
  2. Heat Water – Ideal temperature: (90–96°C).
  3. Prepare the Filter – Place a paper filter in a V60 dripper and rinse it with hot water to remove any papery taste.
  4. Add Coffee Grounds – Use a ratio of about 1:10 (e.g., 10g coffee to 100ml water).
  5. Bloom the Coffee – Pour a small amount of hot water (twice the coffee’s weight) over the grounds and let it sit for 30–45 seconds. This releases trapped CO₂ for better extraction.
  6. Slowly Pour Water – Using a gooseneck kettle, pour in a slow, circular motion over 2–3 minutes, ensuring even saturation.
  7. Let it Drip & Enjoy – The brewed coffee slowly drips into the vessel, creating a clean, bright, and flavourful cup.
